*Fried Green Tomato Stackers*
Y’all have got to try these bomb vegan fried green tomatoes! I have to stop myself from making them every day haha.They were SO good! You guys are going to love them!
*Fried Tomato Stackers*
Yields: 8-10 Fry Batter
2 Heirloom Green Tomatoes
1/2 Cup Almond Milk
1/2 Tbs Apple Cider Vinegar
1/2 Cup Organic Unbleached Flour (I used the brand Arrowhead Mills)
1/2 Cup Cornmeal (Bobs Red Mill Stone Ground Medium)
1 Tbs Flaxseed Meal ( I used the brand Bobs Red Mill)
Dash of Onion Powder, Garlic Powder, Cayenne, Himalayan Pink Sea Salt, Pepper (to taste)
Spicy Aioli Ingredients:
2 +1/2 Tbs Vegan Mayo (I used the brand Follow Your Heart)
1 Tbs Fresh Lime Juice
1 Tsp Smoked Paprika
Dash of Himalayan Pink Sea Salt + Black Pepper
1. Add your almond milk + apple cider vinegar to a mixing bowl + mix + allow to sit for 15mins 2. Slice your tomatoes into small round slices + dip them inside your milk (when it’s ready)
3. Add your flour + flax meal +cornmeal + seasonings to another bowl + mix together
4. Dip + cover your milk dipped tomatoes inside your fry batter + coat evenly
5. Add enough oil to pan to deep fry the tomatoes(1/2 Cup Olive Oil) + pre-heat
6. Add your batter coated tomatoes one by one to pan + fry until crispy
7. Flip and cook each side evenly (allow to get deep brown and crisp but not burnt)
8. When you’re cooking your last few tomatoes add your spicy aioli ingredients to separate bowl
9. Mix aioli dressing until you have a thick liquid texture (as pictured)
10. Allow the extra oil on tomatoes to drip out on cooling rack or white paper towel
11. Stack your cooked tomatoes on top of one another + drizzle with spicy aioli + eat right away!
